IBM Computing Cheese Cutter [Restoration]

This restoration is on a ~1920s International Business Machines (IBM) cheese cutter. Several different parts of this machine were all patented between 1901-1907 by William G. Templeton. The main patent can be seen here: patents.google.com/patent/US7...

This item was brought to me by a friend for restoration, so I made sure that whatever restoration choices the needed to be made were discussed with him. The cheese cutter was most likely used for commercial purposes in a local deli, but the exact provenance is completely lost with time.

Most of the time spent restoring this tool was spent on me trying to figure out why it was so much more complicated than it needed to be. I finally figured out how the cheese cutter works, and you can skip to the end of the video for a detailed explanation by me.

Beyond the usual repainting of parts, several parts were missing and had to be completely re-fabricated from scratch. The "warp-proof" wooden board was made out of maple and walnut wood in layers with alternating grain direction. I've never made my own plywood before, so that was something I hope to never do again.

I am excited to see where this cutter goes next and I think I would be really neat to see it back in action a local deli.

    A failure of imagination on my part: What on Earth is a 'Cheese Computer?' Why would anyone need such a complex device to cut cheese? Ah, I see. A bit of a niche product, but useful if you ran a cheese shop. Um, wouldn't such a person get pretty good at cutting cheese?

    The central plateau could have been made of normal wood (and he did not chamfer it). Well, and the corner of the blade, facing the center, it was reasonable to round off, you can see that he tears the cheese. And too lazy to make high-quality scales... Центральное плато можно было б и из нормального дерева сделать (и фаску у него не снял). Угол лезвия, обращённый к центру разумно было закруглить, видно что он рвёт сыр. Ну и со шкалами схалтурил.

    The analogue computing functionality was pretty nifty. Being able to get more-or-less the right amount in one cut would have been a big draw for shop owners a century ago.

    Looks like the inside of the blade (the vertical part at the centre) could be sharpened as well. I could see cheese getting pretty mangled on the inside of the wedge without it (as it kind of does in the video). Beautiful restoration, really enjoyed watching! Thank you!

    It's kind of funny because you restore tools and really seem to love tools but then I think I saw you using a chainsaw multi-tool wrench thing to unscrew some flat head screws! 😂 Not that it didn't work but I would sort of expect you to have a set of your favorite screwdrivers that you love to use.

    Cool video - thanks! Not sure if I was missing something but at the end when you said you were dialing 8 Oz it looked to me like it was actually set halfway between the 10 and 15 - so 12.5? But then it ended up being 8 oz, so .... ? Lol Cool contraption tho and great job with the restoration!
